Easy Peanut Butter Protein Balls

Prep Time: 15 minutes

Yield: 22 balls

Serving Size: 2 balls

Made with only five ingredients, these quick no-bake bites taste like peanut butter cookie dough! They're whole grain, gluten-free, refined sugar-free, and a great source of protein.

  • 1/2 cup creamy natural peanut butter
  • 1/4 cup honey
  • 1/2 cup oats, ground in oat flour (see Notes on how to do this or use 1/2 cup store-bought oat flour)
  • 1 teaspoon vanilla extract or vanilla bean paste
  • 2 scoops vanilla protein powder
  • 1/2 cup roasted salted peanuts, finely chopped

  1. Combine all ingredients in a large bowl, stirring until a thick dough forms.
  2. Use a 1-tablespoon size cookie scoop to portion out mixture. Roll each portion into a ball and place them on a cookie sheet.
  3. Refrigerate until firm, approximately 2 hours. Store in an airtight container in the refrigerator for up to two weeks. They hold up well even when room temperature so don't hesitate to pack them in a lunch!
