Easy Single-Serve Trim Healthy Mama Molten Chocolate Lava Cake Sundae


Chili’s Molten Lava Cake was my favorite dessert in high school – I went to the restaurant and ate an entire one by myself once during a particularly emotional time in my life 😛 The combination of warm cake, hot fudge, vanilla ice cream, and chocolate hard shell is definitely more than the sum of its parts.


This single-serve Trim Healthy Mama version is perfect for the holiday season, when you might be struggling with extra temptation in your efforts to stay on plan. Nothing satisfies your cravings like a fudgy molten cake topped with melty vanilla ice cream and crunchy chocolate hard shell!


I used Breyer’s CarbSmart ice cream for this recipe since it’s quick and easy. It’s a low-carb ice cream that Pearl mentions in the first book, I believe. It is made with off-plan sugar-free sweeteners, however, so if you prefer you can substitute your favorite homemade THM ice cream.

Black Mirror. As someone who’s been obsessed from childhood with The Twilight Zone, Ray Bradbury’s short stories, technology paranoia, and anything even remotely sci-fi, speculative, scary, and/or satirical, this British show that was recently released on Netflix is rocking my world. It’s not for the faint of heart, but if you tend to like this genre of TV/movies/books you need to check out this show. It’s my new favorite.

Easy Single-Serve Trim Healthy Mama Molten Chocolate Lava Cake Sundae

Prep Time: 10 minutes

Yield: 1 large single serve cake

This indulgent sugar-free, low-carb molten cake, topped with ice cream and chocolate hard shell, is a chocolate lover's dream come true! It will squash your chocolate cravings in one fell swoop. A Trim Healthy Mama way to enjoy a molten lava sundae.


    For the cake:
  • 2 ounces unsweetened chocolate
  • 1 tablespoon butter
  • 1 teaspoon coconut oil
  • 1/4 teaspoon salt
  • 3 tablespoons Truvia (or sugar-free granulated sweetener of choice)
  • 1 tablespoon vanilla extract
  • 1 tablespoon collagen
  • 1 egg
  • Breyer's CarbSmart Vanilla Ice Cream
  • For the chocolate hardshell:
  • 1 tablespoon coconut oil
  • 1 tablespoon sugar-free chocolate chips


  1. In a small microwave safe dish or ramekin, melt baking chocolate and butter. Stir in coconut oil, salt, Truvia, vanilla, collagen, and egg. Level surface of batter and microwave mixture for 60-90 seconds, or until firm around the edges but gooey in the center.
  2. Remove cake from microwave and allow to cool for a moment. While it's cooling, combine the chocolate hard shell ingredients in a small microwave-safe dish and microwave until completely melted, stirring well.
  3. Top cake with ice cream and top ice cream with a generous drizzle of chocolate hard shell. Enjoy immediately!

    Margeaux, does the collagen have dextrose or multidextrin in it? This recipe looks delicious but most gelatln has either of the two ingredients. I have a food sensitvity to them.
