I love giant bakery cookies. But sometimes (well, probably most of the time) I need a giant cookie that isn’t full of sugar and butter and white flour. And I need just one of them.

Single Serve Kitchen Sink Cookie Recipe

This is my solution. It’s a simple, straightforward, customizable recipe for one giant cookie. Sweetened with stevia, made with my low-carb, gluten-free, high-fiber flour blend, and full of delicious mix-ins (hemp seeds, chocolate chips, and coconut, in this instance).

It’s made with a whole egg and a tablespoon of peanut butter, so it actually makes for a well-rounded “meal”. The best part is – zero to cookie in under 20 minutes!

THM-S Low-Carb Sugar-Free Gluten-Free Single Serve Chocolate Chip Cookie

Single-Serve Jumbo Kitchen Sink Cookie Notes: 

  • This recipe is low-carb, sugar-free, gluten-free, and THM-S. 
  • The teaspoon of coconut oil is optional but it does make the cookie a bit moister.
  • Go crazy with the mix-ins or keep them simple. You could make this a breakfast cookie by omitting the chocolate and adding a tablespoon of rolled oats.
  • Be sure to not overbake this cookie! It’s better to ere on the side of slightly underbaking it. It will continue to bake on the pan after it’s removed from the oven.

Single-Serve Jumbo Kitchen Sink Cookie

Yield: 1 jumbo cookie

Serving Size: 1 cookie


  • 1 egg
  • 1/4 cup Margeaux Vittoria Baking Blend (recipe here) or Trim Healthy Mama Baking Blend (buy here)
  • 1 tablespoon peanut butter
  • 1 teaspoon coconut oil (optional)
  • 2 tablespoons Pyure Organic Stevia All-Purpose Blend
  • 2-3 shakes NuNaturals Nustevia Pure White Stevia Extract
  • 1/2 teaspoon vanilla extract
  • Pinch salt
  • Pinch baking soda
  • 1/4 teaspoon baking powder
  • 3-4 tablespoons mix-ins of choice (I used 1 tablespoon low-sugar chocolate chips, 1 tablespoon hulled hemp seeds, and 1 tablespoon unsweetened coconut flakes)


  1. Preheat oven to 350º F. Spray a cookie sheet with coconut oil baking spray.
  2. Stir all ingredients together in a small bowl. Transfer dough to prepared pan and shape into a level mound. Bake for 13 minutes, or until golden brown and just set on top.
  3. Allow cookie to cool on pan for a few minutes. Enjoy warm.
