Stupid Easy Trim Healthy Mama Chocolate Chip Cookies


I keep coming back to cookies. They’re my dessert muse.


This low-carb, sugar-free, gluten-free cookie recipe is stripped down to the basics, but it offers a few benefits that I appreciate:

  • It doesn’t require any special flour blends or mail-order ingredients.
  • There’s only seven ingredients total.
  • You don’t have to chill the dough or wait around for other time-consuming steps.
  • You only need one bowl.
  • The cookies keep well and freeze well.
  • These cookies are a Trim Healthy Mama “S” dessert. They’re a great way to introduce a newbie to this way of eating, because they’re approachable both flavor-wise and preparation-wise.


It’s a workhorse kind of recipe for when you need cookies but you’re doing something like, say, moving into a new house ;P


What’s Making Me Happy This Week:

We finished most of the painting in our new house this weekend (well, Zach did most of it while I made food, cleaned up paint drips, and provided podcasts for entertainment) and we’re getting furniture delivered tomorrow and I can’t wait to see how everything comes together!

The picture below is our living room – I bought the rug last week and I adore it. The walls used to be a less-than-cohesive combo of grey, dark grey, deep red, and a flesh-y peach. The space seems so much more open and light without the crazy colors.

  • These are really tasty frozen!
  • Feel free to add chopped nuts or coconut if you like extras in your cookies.

Stupid Easy Trim Healthy Mama Chocolate Chip Cookies

Prep Time: 10 minutes

Cook Time: 14 minutes

24 minutes

Yield: 18 cookies

Serving Size: 1 cookie


  • 1/2 cup softened salted butter
  • 1/3 cup Gentle Sweet, DIY Gentle Sweet (my pick), or low-carb sweetener of choice
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 2 cups blanched almond flour
  • 1/2 teaspoon baking soda
  • 2/3 cup sugar-free chocolate chips


  1. Preheat oven to 350º F and spray two baking sheets with coconut oil baking spray. Set aside.
  2. Using a stand mixer, beat together butter and sweetener. Add eggs one at a time, beating for one minute and scraping the bowl after each addition. Beat in vanilla extract.
  3. Add almond flour and baking soda and mix until thoroughly combined. Fold in chocolate chips with a spatula.
  4. Use a tablespoon-size cookie scoop to portion out 18 cookies, dividing them between the two prepared pans. It's alright if they're fairly close together because they won't spread much.
  5. Bake cookies for 7 minutes, then rotate pans top to bottom and front to back and bake for 7 minutes more. Cool on pans for five minutes, then transfer cookies to a wire rack and cool completely. Store cookies in an airtight container at room temperature for up to three days or in the freezer for up to two months.
