Three Ingredient Chocolate Almond Milk Ice Cream
I’ve been experimenting with eating a more plant-based diet but all this hot weather means I’m craving ice cream.
After a bit of testing, I developed this super simple dairy- and sugar-free ice cream that can be made without an ice cream maker. I promise it’s also delicious – I was skeptical too 😉
It reminds me of the Fudgesicles I ate when I was a kid. Sweet, chocolate-y, and equal parts creamy and icy. One batch makes two big servings, perfect for sharing while sitting outdoors and enjoying the sunshine.
Three Ingredient Chocolate Almond Milk Ice Cream Notes:
- This could be made with cashew milk or coconut milk (the carton kind) instead of almond. Feel free to sub any granulated sweetener you prefer as well.
- I added some chocolate chips to mine – get creative with add-ins if you feel inspired. Coconut flakes, nut butter, vanilla bean or other flavorings, or toasted nuts would all be delicious. Just stir them in before the second freeze.
